Would look at T-Mobile before you get too crazy with hardware.
Depending on your location you can spend much more on antennas and cabling.
Verizon AT&T also have a home solution. There also Starlink maybe this year??

For plug and play , works with carriers on their data only plans? I would say Peplink has been really pushing the bar for the new 5G stuff and getting acceptance from T-mobile lately on their 5G data only plans.
For customized diy routers. It's all subjective and still pretty wild west.
