Thank you! I looked through the manual for the EM20 but I couldn't find the command to change the protocols which is something to do with "usbnet". Is there another directory for at commands other than the manual?

Quectel likes to omit commands that were previously established, yet still supported. Sometimes you have to find a special manual, or look through the older ones.
