What is happening here with this speed test? Why do I get the negative spikes?

I would remove the MoFi, WiFi from the equation. 8-)
Plug an ethernet cable into the LAN and connect to a computer.
For your speed test

What day, and time of day of speed test.

What is the
RSRP dBm (Reference Signal Received Power)
RSRQ dB (Reference Signal Received Quality)
SINR dB (Signal to Interference &Noise Ratio)

Could also be band hopping Would lock on one band only. and retest
