GL-X3000 w/ AT&T Premium PL - Please check over my plan

Hi,
I have purchased a GL-X3000 to replace an aging Sierra RV55 (MC7455) unit.
The RV55 currently has the 100GB DataConnect plan attached, but as you know, this is costly and I am unsure of the prioritisation of the data. I would like to roam in Canada periodically, and DataConnect does not have Mexico and Canada roaming included like AT&T's phone plans.
I would like to use Unlimited Premium PL with the Turbo attachment to get prioritised data. It is critical that I have a reliable connection.
To successfully perform this I need to:
- Perform magic on the GL-X3000 (sacrificing the identification of a 5G phone that has a physical SIM card slot).
- Add a line at AT&T and get a SIM card for the device, providing them with the magic IMEI.
- Insert the SIM into the GL-X3000, set the APN to "enhancedphone"
- Optionally set the TTL and HL, but it is my understanding that AT&T does not use TTL/HL to discern hotspot data from phone data.
Please inform me if I'm missing anything.
I know that GLiNet also sells the physical SIM card that you can write eSIMs to. Is this something I should prefer over getting a real SIM from AT&T?
