Can anyone provide a step by step guide on how to successfully setup port forwarding through a VPN tunnel in order to overcome the CGNAT issue? I have seen many people brush the topic in comments, but I can't find any good tutorials on how to make it work. Thanks

Yes I second this. I’ve tried getting my Plex server to work but I’ve never found anything useful that works for establishing a static IP that I can remotely access the server back home. A guide would be nice or if someone knows of an existing guide elsewhere that would be helpful.
