Broadcast/access two modems over their own dedicated AP

Would it be possible to:
1. Have both modems - modem1, modem2 be on simultaneously?
2. Broadcast/access both modems - modem1, modem2 - over their own dedicated AP - APModem1, APModem2?
To be clear, I am not asking for failover, load balancing or bonding. All I'm trying to do is - instead of running two GOrb routers with their own modem - is it possible to run ONE GOrb router such that it broadcasts each modem over its own AP?
The heaviest use of bandwidth are a few zoom meetings lasting around 30 - 40 minutes a day but not at the same time so this router won't be heavily loaded.
If it helps, I have a huge pile of Archer C7s and that's what I use.
