Wireless Joint

I had purchased AT&T Fixed wireless plan, but decided to cancel to continue using my unlimited LTE service.

I now own the antenna that comes with AT&T Fixed wireless. Is there anything I can do with it?

It is currently still installed and pointed at my nearest cell tower. But looking at the back of it, it looks like it only has an Ethernet out. Is there any way to utilize it or should I just uninstall it?

It really depends on what it is. Likely not, but you never know. The antenna itself may be useable.
