Carrier or Reseller Options for MoFi 4500 SIM4 w/ Sierra Wireless MC7455 Cellular module

Hello All,
I'm new to this forum and wanted to see (like most people these days) any recommendations on options for using a MoFi 4500 SIM4 w/ Sierra Wireless MC7455 Cellular module?
My family and I are currently on the road for the next 6 months plus while I'm working and we are exploring BLM/National Parks on the weekend but I need to work during the week.
I previously had Trifecta wireless with Verizon but they were "shutdown" by Verizon and it appears that many if not all resellers are experiencing the same fate. COVID-19 has pressured the system if you will and I think all providers are looking to squash abusers (or not) on their networks.
So I'm on the road, not wanting to deal with RV Park WiFi and wanted to see if anyone could provide possible solutions? We do some Nextflix streaming at night, but the majority of my works is over RDP for 8-10 hours, which calculates btwn ~25M and 50M per hour.
I have an AT&T iPhone (for work) and haven't heard of much success tethering to the MoFi and I think it uses hotspot anyway. Looking for a couple options and am willing to pay, since Trifecta was $129 a month.
Additionally we are traveling to relatively remote areas within Utah, Colorado, Wyoming, and Montana so service will be ok at best I assume. I have dual Yagi Ant. with a 25ft telescoping pole attached to my rig, so will be able to point a different towers.
Basically I've exhausted my hours going down wormholes on the interwebs and wanted to see if anyone could point me in a good direction.
