PoE capable router build recommendations

I would like to build a router/modem setup that can be PoE powered to mount outside near antenna to minimize cable run. Suggestions or recommendations for hardware? Open to about anything and am planning to use EM7565 or 7511. Would there be any benefits to using a Quectel setup? Would like to use AT&T network with some sort of unlimited plan but also need some guidance with picking the correct plan for this build. Any help would be much appreciated. Thanks in advance.

Antennas
At first you can try your service with the "stubby" antennas which comes with the router, and if you'd like to improve your signal/speed, you may want to get a pair of high gain external antennas.

I have a PoE powered RPi3 and EM7565 in a USB on enclosure on AT&T that works great.
