Per GL.inet, the GL-M2 development board with the RM520N-GL modem installed can be connected to the GL-MT3000. I assume it is plug and play and no configurations needed since these are GL.inet products.
But, instead of using the GL-M2 (since no included enclosure) + , could I simply go ...

Depends on the modem. With an older Quectel-EC25-AF CAT4 you'll get around 20Mbps, with an EM06 CAT-6 around 50Mbps (average).
